Spice Substitutions

Bonus post this week while I decide what recipe to share! This is a list out of the Wyc. International Cookbook I have. I don't use it much for recipes, but it does have some useful suggestions and substitution charts. I have gone to this list many times when I've realized I don't have or am out of a particular spice. Hope it helps you too!

Allspice: 1/4 tsp each nutmeg and cinnamon + 1/2 tsp cloves
Anise: fennel, dill, cumin, or caraway
Basil: tarragon or summer savory
Bay Leaf: thyme
Caraway: fennel or cumin
Cardamom: cinnamon or mace
Chervil: parsley, tarragon, or cilantro
Chili: cayenne pepper + cumin + oregano + garlic, to taste
Cilantro: coriander leaf, celery leaf, or parsley
Cinnamon: allspice or cardamom
Cloves: allspice, nutmeg, or mace
Cumin: 1/3 anise + 2/3 caraway, or use fennel
Curry Powder: Combine and use amount called for: 2 Tbs each coriander, black pepper, cumin, red pepper, turmeric, and 1 1/4 tsp ground ginger. Or use a combination of allspice, cinnamon, fennel, garlic, mace and adjust to taste
Dill: celery seed
Fennel: anise or caraway
Mace: allspice, cloves, nutmeg or nutmeg + cardamom
Marjoram: oregano or thyme
Nutmeg: allspice, cloves, or mace
Oregano: marjoram, rosemary, or thyme
Parsley: chervil, tarragon, or cilantro
Pumpkin Pie Spice: Combine 1/2 tsp cinnamon + 1/4 tsp each cloves and nutmeg + 1/8 tsp each cardamom and allspice
Rosemary: marjoram or oregano
Sage: rosemary or oregano
Savory: thyme
Sesame: finely chopped almonds
Tarragon: chervil or parsley

Note that some of these suggested substitutions really won't taste that much like the real thing! I think that specifically about the suggestions for cilantro, sesame and cumin--the things this list recommends really don't taste like either of those!
