Chicken Broccoli Casserole
2 large heads broccoli, chopped and cooked
4 chicken breasts, cooked and chopped
1 can cream of celery (or mushroom)
1 can cream of chicken
1/2 tsp curry powder
1/2 cup mayo
1 cup shredded cheddar cheese (or whatever is available)
Bread or cracker crumbs
Place cooked, chopped broccoli in 9x13 casserole dish. Cover with cooked, diced chicken. Mix together soups, curry powder and mayo. Spoon over top of chicken and broccoli. Sprinkle cheese over that. Finish by topping with bread or cracker crumbs. Bake at 350F (180C) for 30 minutes or until heated through.
This is a great quick meal. In the States you would use frozen broccoli to make it quick, but I use fresh here, adding some salt to the water I boil it in. This is something I used my chicken from the crockpot in! I will tell you, this makes a huge amount. We ALWAYS half the recipe and have enough for 2 meals for our family. If you are halving the recipe, just use 1 can of soup (or 1 1/2 cups of the cream of chicken substitute)--I would recommend chicken. This has a very mild curry flavor, so even if you aren't a big curry fan, its not too strong. We actually often add extra because we like it. Our favorite way to do this is to top it with diced bread pieces. I don't even make them crispy first, just cut and use. Chunky cracker crumbs are okay, too. They will be best if you stir them in some melted butter first. Last night, Micah kept saying, "I really like this casserole, Mama!" But he's a broccoli eater...the other 2 are not! They all like the "croutons" on top though!


Our family just moved to China two months ago, and we'd be eating pbj every night if it weren't for your blog! Thank you so much for serving the expat community in this way. I was also wondering what brand of mayo you recommend...which kind comes closest to American or would be best for this kind of casserole?
ReplyDeleteHi Mary! I usually use Kewpie brand. Its pretty widely available. The red label is the one I use--the blue label is sweeter. The red label still doesn't taste quite like "home" but you get used to it! Works great in this casserole, Ranch dressing, dips, etc.

ReplyDeleteCourtney--I usually just make my cream of whatever soup. http://www.market2meal.com/2010/10/condensed-cream-of-chicken-soup.html this works great, or also one of these: http://www.market2meal.com/2009/12/cream-of-chicken-soup.html Sometimes import stores or wholesale markets that supply restaurants will carry them. And I've never looked on Taobao, but I'm SURE you could find cans there. Hope this helps! My daughter's middle name is Laine too. :)
