Christmas Breakfast Casserole

A few years ago, I decided I needed a special, easy breakfast for Christmas morning. Since then, I've been making the following breakfast casserole for Christmas and even a few other times a year! If you don't know this already, I HATE eggs. Can't stand the texture, smell...pretty much anything about them. But in recent years I have been trying to overcome this aversion with some very meaty, cheesy, crusty casseroles and quiches. This is the ONLY way I do eggs--if they are masked by tons of other good things! So, even if you don't like eggs, you might like this. The joy of this casserole for us is that you make it the night before. This way I don't have to be missing any part of our celebrations on Christmas morning to go make breakfast. I usually pop it in the oven before we even get the kids up. This is on the road to being a Christmas tradition for us (can it be labeled a "tradition" if you've only done it once or twice? I struggle with this!). I hope that one day when our kids come home for Christmas with girlfriends, husbands, kids, etc that certain aspects of holidays will be expected and awaited. Food wise, I want this to be one of them!

Sausage Breakfast Casserole
1 lb sausage (not links)
8-10 eggs
3 cups milk
2 tsp dry mustard
1 tsp salt
6 cups cubed bread (great way to use stale bread)
2 cups shredded cheese
1/2-3/4 tsp black pepper

Cook sausage in a skillet. Drain excess grease. Wisk together eggs, milk, mustard, and salt. Set aside. In a 9x13 casserole dish, layer half of the bread cubes across the bottom. Top with half of your pepper, half of the sausage, and half of the cheese. Repeat, adding another layer of bread cubes, pepper, sausage, and cheese. Pour egg mix over top. Cover and refrigerate overnight. Preheat oven to 325F (160C).  Bake casserole for 1 hour. Let sit about 5-10 minutes before cutting and serving.

FYI--I usually make a half recipe for our family, bake it in an 8x8 or 7x11 casserole dish, and we still eat it for 2 meals!!

  2. YES!! That's the one I use for everything unless its Italian sausage. I'm going to be guest posting another sausage soon that's just a bit different. I LOVE this casserole. We had it this week!
