Beef and Potatoes

Its guest blog day again! I sent an email out to a few friends recently to submit some blogs since I'm traveling for about 3 weeks right now. So, first up is a recipe from Kandy P.! Kandy has been part of my life for nearly 10 years now. I first met her when I was living in Taiwan right after college. Kandy has lived overseas for more than 20 years and is a PRO at making the most awesome meals you can imagine with whatever is available to her! She actually sent me a few things to post, so here's the first!


Having lived in Asia for 20 years, I've tried my hand at lots of scratch cooking.  When I arrived, I was actually given a "Tips and Treats" cookbook, which had tried and true recipes from ladies who knew what they were doing.  I learned to make yogurt, buttermilk, sour cream, and cottage cheese from that one amazing source.  Going to several different locations around the city in order to actually have all the ingredients for a meal became a way of life.  Despite the fact that Sara Beth said she couldn't get good beef, I am submitting a beef recipe.  I made this regularly from my location using the low quality beef that the market will sell shaved for stir-fry dishes.  It's easy and super quick for a busy night.  See what you think.


One-Pan Potatoes and Pepper "Steak"
4 medium potatoes, sliced 1/4 inch thick and microwaved 6 to 10 minutes until tender
1 lb. shaved beef
1 Tablespoon pepper, or less to taste
1 clove of garlic
2 Tablespoons oil
1 green bell pepper, cut into strips

While potatoes cook, toss beef with pepper and heat oil in large skillet over medium high heat;  add beef and stir-fry for about 3-5 minutes, until just done.  Remove beef.  Add green pepper to skillet; stir-fry 3 minutes.  Add potatoes and saute together for 5 minutes.  Add beef and stir together until heated through.  Season with salt.  Serves 4



**I think this looks like a great dish for most of us! I think you could use shaved pork just as easily as you could beef, too! So experiment!

  2. Glad you liked the pasta! We love it too. Always make it with broccoli, though, I'd like to try it with spinach. Maybe I should post it on here soon...I try to avoid recipes with cream cheese, but a lot of people who read this blog can get it.

    Oh, and I'm definitely trying this recipe when we get home--Love meals that are cheap, easy, and entirely local!!
