Roasted Red Pepper

I think a lot of you live overseas. You probably can't buy a jar of roasted red bell pepper in your grocery store. So, here's a quick, easy way to make them and they have a great flavor!


Start by washing your peppers and then coating them lightly with olive oil. I use disposable chopsticks and spear on on either side of the stem. Hold over the open flame of your gas stove and rotate slowly. Do this until you have mostly charred the outside of the pepper.


Place your roasted peppers in a container with a lid that seals or in a ziplock bag. Let them cool there. Sealing them in will help the moisture cause the skin to bubble up and loosen.


Take the back side of a knife and scrape as much of the charred skin off as you can. It will be hard to get every little piece, so don't worry too much about little bits.


Slice or dice the pepper as you need for your recipe. You'll have to de-seed and clean up the inside like you normally would. 

This process is super quick and easy if you have a gas stove. If not, you can do the same thing by just roasting the oiled peppers in your oven until black spots appear, but it will take a lot longer. I'll share a recipe later in the week using roasted red peppers!

  2. Yeah, a few years ago I had been given this pasta recipe and it sounded good and was all local stuff except the jar of roasted peppers. I figured I had to be able to do it myself, so this was the main method I came across when I googled making them. We've been doing it since! You'll have to send me some more recipes with roasted peppers--I don't really have any I make other that the one I just posted. Though they are good with hummus or on a sandwich, too!
