So, I just started making this dressing a couple weeks ago. My friend, Tracey, gave me the recipe. We've really enjoyed it on spinach salads with fresh strawberries, apples, or whatever fruit you can get! I think I've eaten more spinach salad in the past couple weeks than I ever have! Our kids aren't too into the spinach part, but they like dipping apples and strawberries in the dressing. Hope you can get what you need for this and enjoy as much as we have!
Poppy Seed Dressing
1/3 c red wine vinegar
3/4 c sugar
1 tsp salt
1 tsp dry mustard
1 small onion, chopped
1-2 Tbs poppy seeds
1 c vegetable oil
Mix all ingredients in a blender, except oil. Slowly add oil with blender running. It will thicken quickly. The longer you blend, the thicker it will get.
Notes: I would think you could use another vinegar but the red wine vinegar adds a nice flavor. I can get it here where I live so I used it. If you used just white vinegar I might would back off to 1/4 cup to start--its stronger in flavor. I probably used about 1/4-1/3 cup diced onion. The recipe calls for 2 Tbs poppy seeds but I can't get them here and didn't want to use that many--I almost always cut poppy seeds in half in my recipes. It still had more than enough with just 1 Tbs. Also, the first time I made this I put the poppy seeds in when the recipe said. They got pulverized in my blender. The next time I waited and put them in after the oil and just pulsed really quick to get them mixed in. That worked much better for me. Just so you know!

I LOVE the flavor the red wine vinegar gives this dressing. If you have it available, use it! But I was out last night and wanted to still make some. I ended up using cider vinegar for it and the flavor is still really good. Which makes me think that you could use white wine vinegar or even white vinegar and still have an excellent dressing.
