So I'm actually not the hugest fan of Kettle Corn--normally. All bets are off when you're pregnant though aren't they?!? Total aside, we had an ultrasound this past week and it looks like we're going to have another little girl! Two and two. We're excited. Back to the point--I've been seeing a lot of popcorn recipes pop up around food blogs (no pun intended!!). Must just be something about fall? Or Halloween? Whatever the reason, some of the popcorn I've been seeing looks AMAZING, but far from doable for me. So I thought I'd try my hand at making my own Kettle Corn at least. Of course that's exactly what is available on the streets here in China--sweet, caramelized sugar coated kernels. But they are missing that salty aspect characteristic of our idea of Kettle Corn, which is what sounds good to this pregnant girl! So, here is a recipe for making your own!
Kettle Corn
3 Tbs oil
1/3 cup popcorn kernels
3 Tbs sugar
Salt
Heat oil in a pot. Meanwhile, mix together popcorn kernels and sugar in a cup or bowl so you can throw them in at the same time. Just as oil starts to smoke a little bit, throw in the popcorn and sugar. Quickly stir to coat in oil and put the lid on. Continue to shake pot every 10 seconds or so until popcorn is popped. It will burn really easy if you aren't careful! Dump into a bowl and shake on salt. Popcorn will be really hot with all that sugar coating! Enjoy!
This is the perfect amount for 2-3 large servings. If needing more than that, do 1/4 cup oil, 1/2 cup popcorn, and 1/4 cup sugar.
