Pico de Gallo

Okay, I have like 4 different salsa recipes that I make. I can't believe that in nearly a year of blogging recipes that I haven't shared even ONE of them with you. They just keep getting neglected. So, I'm finally going to start sharing them--beginning with a really basic pico de gallo. Its simple in its flavors, but so good! I especially like making this salsa when we're making Chicken Enchiladas because I think its great on top of them! This is a chop and dice recipe rather than a blender salsa, so it might take a little more time, but is well worth it.


Pico de Gallo
3 large tomatoes
1/2 cup + onion
Jalepeno* or other hot pepper
3 Tbs lime or lemon juice (if using lemon, start with 2 Tbs and work up to taste)
1/4-1/3 cup chopped fresh cilantro
1 tsp salt

Dice tomato and onion uniformly. Add other ingredients and mix well. Adjust salt, lemon/lime, and hotness to taste. Refrigerate until ready to serve.

*For most of us, I doubt we can get a fresh jalepeno, so you'll just have to figure out what type of pepper works for you. Use local ones, or maybe pickled jalepenos from a can or jar or something along those lines. Since peppers are going to have varying degrees of hotness, you'll have to just figure out what works for what you have.
