Cabbage Soup

Okay, so I'm in warm, sunny Thailand. Soup is the last thing on my mind. But I know a lot of you are in places with cold weather, and my guest blogger sent me a soup recipe that is begging to be shared! That's right, its Guest Blogger Day! Since I'm in a make-do kitchen for a couple months, there isn't a whole lot of creativity coming from me, so I'm thankful for a few friends who are good cooks that can send recipes to share. "This recipe was from my 86 year old Aunt Sis. Despite its name, I've never served it to anyone who hasn't liked it....including those that don't like cabbage!"



Cabbage Soup
1 cup diced carrots
1 cup diced potatoes
2 cups shredded cabbage
3 1/2 cups chicken broth/stock (2 cans)
1 tsp salt
1/3 cup flour
1/3 cup butter plus 2 Tbs
1/4 tsp pepper
1/4 tsp paprika
3 cups milk
1 cup grated cheese

Saute carrots and potatoes in 2 Tbs of butter for 5 minutes. Add cabbage and saute another couple minutes. Add broth and bring to a boil. Simmer on low until veggies are tender (about 10 minutes).


Meanwhile, mix dry ingredients in a small bowl. In a separate skillet, melt 1/3 cup butter. Quickly add dry ingredients, stirring until moistened.


Immediately add milk.


Stir constantly until it comes to a boil, then boil about 1 minute.


Remove from heat and add cheese. Add to veggie mixture, heat thoroughly and serve. Makes 4-5 servings.

  1. I just want you to know how much I appreciate your recipes. We had this last night and it was great. We also had your broccoli cheese soup this week. Thanks for all the great ideas and tips.

  2. This was super good. Next time I'll do at least 1 1/2 cups of veggies and more cabbage. I also only did 2 cups of broth and though that with the added milk it was plenty of liquid. I didn't add the cheese. Looking forward to this one again!
