Hershey's Perfectly Chocolate Cake

Well, I guess its about time for me to start posting some recipes again! Since little Adiel was born we've actually been rather busy with my parents being here and then some meetings this week. Can I just say how encouraged I was this week? This was on many levels, but I can't count the number of times that I got to personally hear people say how much they enjoy this blog, or a favorite recipe they have tried off here, or be asked for my blog address because so and so had told them about it. I'm SO GLAD this is something helpful for others. I told several this week--I love cooking and doing this helps me stay creative for my own family. But I'm so glad its useful for others of you. And, please, if you told me you were going to send me a recipe to share, you better do it!! I always need ideas and a whole bunch of you are better, more experienced cooks than me!

Okay...recipe for today! Karen H. sent me this. Then when I was trying it, I noticed it was on the back of the Hershey's cocoa I was adding to it! I'd had the recipe all along! Anyway, super simple recipe. The only non-local ingredient for some of us would be the cocoa, but I know we all keep a supply of it! This cake is SO moist. You must try it!

Hershey's Perfectly Chocolate Cake
2 cups sugar
1 3/4 cups flour
3/4 cup cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup oil
2 tsp vanilla
1 cup boiling water

Preheat oven to 350F (180C). Mix together all ingredients. Pour into greased and floured 9x13 pan or 2-3 round cake pans. Can also make about 24 cupcakes. Bake 30-35 minutes or until toothpick inserted in center comes out clean.

Notes: You can frost the cake or cupcakes with a simple icing or glaze. But, though my husband would disagree, if you're wanting something quick and easy, just sprinkle on some powdered sugar to make it look nice and serve it just like that!

Happy Valentine's Day!

This is my absolute favorite chocolate cake recipe! I also discovered it when we were living overseas and I saw it on the hershey box. Been smitten with it ever since. :) hooray for a keeper!
