The first Christmas Brian and I were married he gave me a book called Treasuring God in Your Traditions by Noel Piper. I didn't have a family yet when I first read the book, so a lot of what I read was just in theory. I've gone back and read the book again a time or two now that I have kids! But at that time, my biggest take away from the book was a spaghetti sauce recipe! I've been using this one ever since. Its a really basic sauce that is super quick and easy. One thing I like is that the Worchestershire sauce helps in over coming the taste of local tomato paste, which isn't always the best flavor! I've scaled this down to a 3rd of the original recipe! But you could easily triple this and freeze a bunch of sauce or feed an army!
Spaghetti Sauce
1 lb ground beef (ground pork makes a decent substitute!)
1/2 small onion, chopped
1 Tbs parsley
1-1 1/2 tsp salt
1 tsp garlic powder
1 tsp oregano
1 tsp basil
1 bay leaf
1/3 tsp black pepper
2 tsp Worchestershire sauce
2 14oz cans tomato sauce or 3-4 small cans tomato paste plus water to right consistency
About 5 drops Tabasco sauce (opt--not spicy but gives it a little zing!)
Brown meat and onion in a large saucepan. Drain grease. Add seasonings and tomato sauce or paste. Simmer at least half an hour to allow flavors to blend.
Notes: If you can't get Worchestershire sauce or Tabasco it won't be bad without it. Also, the original recipe called for 1 1/2 tsp salt. I find that's too much for our taste so I start with 1 tsp. It will probably depend on your tomato sauce or paste. I use a local can of tomato paste (red and blue can). I usually put 4 of them because it isn't as thick as Del Monte or Hunt's or some western brand of tomato paste. If using those I'd probably only put 3.
