Granola Bites

Recently found this recipe for Granola Bites over on the Two Peas and Their Pod blog. I've found several fun recipes from them. Notably, the Peanut Butter Snickers cookies that are one of my new favorites! They also make a lot of things that I can't get ingredients for but that look SO good! Anyway. I loved this recipe because it could be done with all local ingredients or I could make it a little more "special" using harder to find things. One thing I LOVE about this recipe is my kids do it with me! And they like them! Its a great healthy snack. Please see the notes at the bottom of the post about some substitution ideas, too!


Granola Bites
1/3 cup honey
1/4 cup peanut butter
2 Tbs butter (can use half butter/half oil!)
1 cup crisp rice cereal (*see below!)
1 cup quick-cooking oats
1/4 cup dried cranberries, raisins, or other fruit
1/4 cup chocolate chips (or chopped chocolate bar)

Place crisp rice cereal and oats in a bowl. Set aside. Melt honey, peanut butter, and butter together in a saucepan just until combined. Pour over oat mixture and stir together well. Add in dried fruit. Wait about 5 minutes before stirring in the chocolate chips--if you live in a hot, humid place you might consider putting your chips in the freezer or fridge before mixing them in so they don't melt as easily. Using clean hands, shape mixture into small balls (about 24) and place on wax paper or into mini paper liners to be fancy! Place pan of balls into fridge to set completely. (With the humidity in my city lately, I just keep them in the fridge!) Enjoy!

Notes:
I used part butter and part oil one time and they worked nicely. Consider changing these up by varying your dried fruit and chocolate chip combinations! I can't get Rice Krispies for cheap here, so I substituted a local puffed wheat cereal in mine! One small bag of it is a heaping cup. You can usually find it in the chip aisle in my grocery store! It doesn't bind in the mixture quite as well as puffed rice (its much larger grained), so you might not want to put a whole cup of it (though I have and its good...just crumbles worse!).
