Shish Taouk is a Lebanese chicken skewer. The flavor of this isn't all that different from my Chicken Shawarma recipe but the addition of tomato paste makes it unique. And when do kids not love meat on a stick?! This goes great with pita bread and hummus (yes, I know I don't have a recipe for that on here yet!). We did these on the grill but you could also broil them.
Shish Taouk
3-4 chicken breasts, cut in 1 inch chunks
1/3 cup Greek yogurt (or just use regular, it won't matter)*
3 Tbs olive oil
2 Tbs tomato paste
6 cloves garlic, pressed or minced
juice of one lemon
2 1/2 tsp paprika
1tsp salt
3/4 tsp thyme
1/2 tsp cumin
1/2 tsp black pepper
1/4 tsp allspice
Onion or bell pepper, opt
Mix together all ingredients, except chicken, in a ziplock or container. Add chicken. Marinate in the fridge for 4-8 hours. Soak some bamboo skewers in water for at least 15 minutes. Thread chicken and any other vegetables onto the skewers (I used onion for added flavor). Grill chicken over high heat until done and serve. You can also broil the skewers for 5-7 minutes and then turn and broil 5-7 minutes on the 2nd side.

Edited Note 5/2012: I made this marinade this week but didn't have any plain yogurt on hand. So I just used 1/3 cup out of one of the little blue and white tubs that have thicker, sweet yogurt. They are available in any store, large or small, around here. It still turned out great, even with the sweetened yogurt.

ReplyDeletequestion...when you suggest to broil...does that mean in place of grilling? I'm assuming so...just wanted to make sure.
Hummus has been on my list to post so maybe I'll do that today!!! Just to help you out!! :) I'd been somewhat uninspired so far this week on what to post! And yes, if you broil it, do that instead of grilling. Either or. We grill a lot because we have a gas one, but I know grilling in China apartments and with Chinese charcoal can be a PAIN! We did it for a long time, then we used a bag from the States one time to bring back a Weber portable gas grill!! :)
ReplyDeleteThis was soooo good! I just had some chicken and needed something at dinner time... I used this, without the grill and without time to marinate and my. 2 yr old couldn't eat it fast enough! It's now getting pit into the regular rotation!
