We just finished the India portion of our trip, and I find myself with a little free time and internet as all the kiddos nap in our apartment in Bangkok. We're just hanging here for a week or two while we take care of some visa work. I thought I'd use this bit of spare time to share a recipe. According to Facebook, it is feeling like fall in a lot of places. Not here. Its HOT. But just before I left home, I made a batch of these amazing Blondies and they just screamed fall. They made my house smell so good. Wherever I found this recipe (here I think), they called them spiced blondies. To me, they tasted a lot like gingerbread. So that's what I'm calling them. I had some white chocolate chips stashed away, but you could just as easily chop up a white chocolate Dove bar (or similar) or just leave it out all together. But its very yummy in it! Hope this makes some of you feel like it's fall, too, even if your thermometer says otherwise! Oh, and sorry for some of the measurements being weird. They were weird to start, then I scaled this down to a smaller size to better fit my needs and in my oven--making them even more weird!
White Chocolate Gingerbread Blondies
3/4 cup butter
3/4 cup brown sugar
1/4 cup white sugar
2 small/medium sized eggs
1/2 tsp vanilla
2 1/2-3 Tbs molasses or honey (I used honey)
1 1/4 cups + 2 1/2 Tbs all purpose flour
3/4 tsp baking soda
1/2 tsp salt (can put 1/4 tsp if using salted butter)
3/4 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/8 tsp ground cloves
1/3 + cup white chocolate chips or chopped up white chocolate bar
Grease and flour an 8x8 baking pan (or equivalent size). In a mixing bowl, cream together softened butter and sugars. Add eggs, one at a time, and beat until well incorporated. Add vanilla and molasses or honey. Sift dry ingredients into the butter mixture. Mix well. Stir in white chocolate chips. Spread into prepared pan. Bake at 350F (180C) until edges are pulling away from the pan--about 30-35 minutes. Its okay if the middle is not completely set. Allow to cool. Should make 9-12 squares.
