October is birthday month in my family. In fact all the birthdays are actually in one week. We had a lot of cake during that week! Ha! My sister and my dad just celebrated their birthdays together this past weekend--big birthdays for them. Amy turned 30 and my dad turned 60 this past week. I hated to not be with my family to celebrate. We finish off the week with my birthday! I wish I could tell you all about the amazing cakes my Grandmother made me through the years. In recent years though, Brian and the kids have a lot of fun making me cookie cakes on my birthday. My kids were actually planning today that they wanted to make a bike on my cake this year. Last year they wanted it to be a coffee birthday cake (see the picture!). Brian does a great job doing these, letting them be part of it and a cookie cake is always fun! So here is what we do for cookie cakes here at our house!
Chocolate Chip Cookie Cake
1 recipe of chocolate chip cookie dough (your favorite should work, too!)
1/2 recipe of buttercream frosting
1/2 recipe of chocolate buttercream frosting (see variation at bottom of post)
I don't have any round pizza pans, so I just use a rectangular cookie sheet. Its probably about a 9x13 inch pan. Press cookie dough into the pan to desired thickness--I do about 1/3 to 1/2 inch thick probably. I try not to build up the edges (keep it flat as I can) because it will do it naturally a bit when it cooks. I really only use about 2/3 to 3/4 of the cookie dough in this pan. Bake at 350F (180C) like the cookie recipe says. I don't really have a time for this, but I let the cookie bake until it is puffed up really good and slightly browning around the edges. I try to take it out before it deflates. When I take it out and set it down, it usually falls a bit.
Allow the cookie to cool. Meanwhile, you can mix up the frosting. I just make a 1/2 recipe of each flavor of frosting so I don't have tons left over. If you have decorating tips, you'll want to use a star tip for the edges or any decorating and then just a writing tip for letters. You can also just cut the corner of a bag to pipe it on if you don't have tips. You can just make stars around the edges or try to scallop it a bit if you want it to look like those ones you buy in the mall at cookie cake places.
I love doing the chocolate/vanilla mix for frosting but you could also just do vanilla and color it how you want to. Have fun with it!
