Chocolate Peanut Butter Topped Brownies

Christmas season. Oh I love it. It usually means I make a lot of candy and fun once-a-year desserts and treats. Check the index for a lot of fun recipes already on here. Now, believe me. I plan to make some peppermint patties and peanut butter cups sometime this month. But I'm not going to make them in mass the way I have the past few years (I'm sorry to those of you that might have been expecting them!). I have a 10 month old. I home school. We have a lot going on. I just need to simplify in some areas. But I still want our treats and baking to be special this year. I also want to find ways to include my kids more in the things we do--recipes involving melted chocolate may not be the best for that! Ha! So, one thing I'm trying to do is think of ways to turn some easy recipes into something special. Ordinary to Extraordinary, so to speak. So this is one of my ideas. Hope you enjoy it!


Chocolate Peanut Butter Topped Brownies
1 recipe of brownies (I used my favorite--or you could use a box mix if those are available)
~1/2 cup of peanut butter
2-3 Tbs powdered sugar
Chocolate chips or chopped chocolate bars and peanut butter chips (opt)

Mix up brownies according to recipe (if you use my recipe on here, I omitted the chocolate chips in the brownies since I was putting them on top). Grease muffin pans. Fill muffin cups half full with brownie batter. Bake according to recipe--take out when brownies are just pulling away from the edges and cracking on top. Centers may fall a bit, but that's great! Allow to cool about 15 minutes. If centers didn't fall, push them in a bit with the back of a spoon. Put peanut butter in a small bowl. If you have a microwave, zap it for less than 30 seconds--just to make it easier to stir. Stir in powdered sugar. Place a dollop of peanut butter in the center of each warm brownie. Sprinkle on some chocolate chips or a mixture of chocolate chips and peanut butter chips, if you have them (they will be fine with just chocolate, I just happened to have some pb chips my mom sent so I used those too!). Mix up more peanut butter if it isn't enough. Everyone will probably put different amounts. This is more an idea than a real recipe!!

My brownie recipe made enough for 12 regular sized muffin cups and an additional 8 or 9 minis. Enjoy!
