This is a family-sized recipe! I think the recipe, which I got from my friend Tracey, says it makes 7 dozen cookies. Here in China, that means it can take some time to make these when my oven only bakes about a dozen at a time! Tracey first shared some of these with us when I came home from the hospital after having Adiel last January. I've made them several times since. With the number of cookies it makes, there are plenty for sharing or for freezing and pulling out when you need them! I like having them in there to use if we have last minute dinner guests! Or when I just need a little something! I really love that this recipe makes a ton of cookies but only uses a half cup of butter and doesn't call for too many chocolate chips. I hope you enjoy it like we have!
Oatmeal Peanut Butter Chocolate Chip Cookies
1/2 cup butter or margarine, softened
1 jar peanut butter, creamy or chunky (510g)
1 1/2 cups sugar
1 1/2 cups packed brown sugar
4 large eggs
1 tsp vanilla extract
6 cups quick-cooking oats
2 1/2 tsp baking soda
1 cup semi-sweet chocolate chips (or chopped up chocolate bars)
Beat butter and peanut butter together until fluffy. Add sugar and beat together. Add eggs and vanilla, mixing well. Add in baking soda, then oats and mix until well combined. Stir in the chocolate chips or chunks. Drop by tablespoon full onto ungreased cookie sheets. Bake at 350F (180C) for 9 to 10 minutes. I take them out just when they are starting to look dry on top and slightly browned so they are still good and chewy! Cool on the cookie sheet for a few minutes, then move to a wire rack to finish cooling. Should make about 7 dozen cookies. These freeze great!

ReplyDeleteAngie--I have not bought them on Taobao yet. But they are there. Just search Nestle or Hershey's or 巧克力豆. Also, I'm going to post about it as soon as a friend gets me the info, but I know someone that is working with a contact who sells Belgian chocolate chips here in country and the profits of the sales go to some NGOs that are helping women. She's willing to sell and ship them and just do payment through local banks. They are not set up on taobao..yet. :)
