Chocolate Wheat Zucchini Muffins

I am not a huge fan of zucchini in breads. I mean I can do it, but its not my favorite. But I saw this recipe one time and thought I might could do it with the chocolate in it. Thought I might could sneak the zucchini in on the kids and myself! Ha ha! And I really did like them! Since zucchini are plentiful around here lately, I thought I'd share this.


Chocolate Wheat Zucchini Muffins
1 1/2 cups sugar
3/4 cup oil
2 tsp vanilla
3 eggs
1/3 cup plain yogurt
2 cups grated zucchini
Zest of 1 lemon or 1 orange
1 cup whole wheat flour
1 1/2 cups white flour
1/2 cup cocoa
1 1/2 tsp baking soda
1 tsp salt
1/2 tsp cinnamon

Grease muffin tins or line with paper cups. Whisk together the sugar, oil and vanilla. Add eggs one at a time, then add the yogurt and mix well. Stir in zest and zucchini. Sift together all the dry ingredients and add into wet ingredients a cup or so at a time. Fill muffin cups to nearly full. Bake at 375F (195C) for 15-20 minutes or until they test done.

Notes: The original recipe for this said it would make 12 regular sized muffins--but I made 18 regular AND nearly 48 mini muffins with just one recipe. What in the world?! So, it makes a lot in my kitchen--just so you know! If you can't get wheat flour, you should be fine to just make these with all white flour.

  2. See what I mean?! I couldn't believe the original recipe said only 12 muffins! There was no way, even filling them nearly full! Glad you enjoyed them. I like that they sneak in a veggie.
