On Saturday, 2 of the 4 heating elements in my oven decided to go out. I managed to still make something, but I immediately started brainstorming what I was going to do if I couldn't bake something in my oven to have for some guests coming over on Sunday. I figured I'd have to resort to no-bakes. Everyone probably already has a recipe for these that they love, but thought I'd share the one I use. Back at Christmas, I had some local friends ask me to teach them how to make cookies. I wanted to show them something reproducible in their own homes, but only one of the 4 ladies has an oven. So this was the recipe I went to. My friends actually thought it was a lot of fun that I was making cookies on the stove top and didn't have to have an oven for them! I also love making these for Brian to take when he goes to the mountains. They don't get hard and stale after a couple days like lots of cookies do. They hold up pretty well to being tossed around the car!
No Bake Cookies
2 cups sugar
1/4 cup cocoa
1/4 cup butter or margarine
1/2 cup milk
2 1/2 cups quick-cooking oatmeal
3/4 cup peanut butter
2 tsp vanilla
Combine sugar, cocoa, butter and milk in a saucepan. Cook over medium heat, stirring regularly. Heat until mixture comes to a boil. Boil about 1 more minute and remove from heat. Stir in oats, peanut butter, and vanilla. Drop spoonfuls onto parchment paper, wax paper, or a Silpat and allow to cool.

We make these too, especially in summer! We also sometimes cut back on Oats by 1/2 cup and add 1/2 cup shredded coconut! Nice texture and taste change!
