It has gotten really warm here in our city the past couple weeks. We're running our AC's more and if you step outside you're hot and sweaty in no time. Really, our summer had been relatively cool until then. So my mind has been on ice cream a lot more. I recently had some dinner guests that requested this peanut butter ice cream they know I make. I thought I'd share with you. Its really easy to throw together. Its really yummy with some Reese's chopped up in it, but it can certainly stand up on its own merit, too, since Reese's are not often around our house! This recipe doesn't have eggs. It comes out of the booklet that came with my ice cream maker, but I've adapted it to have less whipping cream than called for to cut back on calories and cost. I make it in our ice cream maker, but it should work fine using this method as well.
Peanut Butter Ice Cream
1 1/2 cups creamy peanut butter
1 1/8 cups granulated sugar
1 cup evaporated milk
1 cup whipping cream
1 3/4 cup milk (I use whole)
2 tsp vanilla
Optional Add-ins: chopped Reese's PB cups, chocolate chips, etc
Mix together peanut butter, sugar, cream, milks, and vanilla in a blender. Refrigerate until cold. Freeze ice cream according to your machine's instructions or follow this method to freeze it without a machine. Stir in any additions you might chose about 5 minutes before done (when ice cream is mostly frozen but can still have things easily stirred in). This amount is for a 2 quart freezer.
Notes: Amazing with PB cups added in, but we don't have those very often. I recently just added in some chocolate chips (chopped a little smaller). Oreos would probably be good too. Especially the peanut butter filled ones you can get here in China (hmmm...may need to try that soon!). Or you could just drizzle on some chocolate syrup. But its really good just plain, too!

ReplyDeleteMy family lives in Changsha and we read your blog. I have a question. What do you do about flour? We love to bake, well I do, my wife doesnt; and Chinese flour is not good or that. I dont want to buy the Ameican stuff at Metro. What do you do? Could I combine the Western and Chiese stuff? Thanks.
Hey Ransom Family-- I use entirely local flour and we turn out some pretty good baked goods! Its taken time to figure out what is good for what though. Unfortunately, MOST flours are already self-rising here. But not in the proportions we'd necessarily have for our self-rising in the States. So you have to find the ones that aren't. I have a whole post on flours in China that you may or may not have looked at yet? The one I find the easiest to use is called TeJinFen. It seems to be the most like all-purpose. I buy it in the local wet market near by house by the 1/2 kilo (2 kuai/jin here). She just measures it out of a 25kg bag and just calls it MianFen, but you can look on the bags to find the right one. Also, if you have Walmart--there is Great Value brand flour that comes in High Gluten (Bread Flour) and Low Gluten (Pastry/Cake Flour). You can mix those in a more or less half/half ratio to create a decent all-purpose. Low Gluten alone makes a GREAT pie crust and the High Gluten works great in yeast breads. I hope this is helpful. I made your vanilla ice cream using the method without the machine. It was delicious although time consuming. My kids loved it and are already asking me to make chocolate, strawberry, oreo, etc. I am wanting to buy an ice cream maker when we are back in the states for Christmas. What brand do you have and do you wish you had bought a different machine? Thanks!

Yes, Angie, the freezer method is time consuming for sure!! I LOVE my ice cream machine. I bought the Cuisinart 2qt (since I have a big family) ICE-30BC I think. http://www.cuisinart.com/products/ice_cream/ice-30bc.html I bought it at a kitchen store with a coupon and got like $20 off. And I think it was only about $75 at the time. I have been very pleased with it. We DO have to use it on a converter. If that's the case for you, you'll want to get one that can switch between lower and higher wattage and use the higher one. But this machine packed smaller in our luggage than a traditional ice cream maker would have. You freeze the inner thing and don't have to deal with ice and rock salt. I hope that helps!
ReplyDeleteThanks for that info. I will plan on leaving enough space in our luggage to get it back. We have a converter already so that should not be a prob. Right now all I use it for is the hair clippers and I would much rather use it on an ice cream maker!
ReplyDeleteI'm sure you could look on Taobao Sheila! That's where I'd start anyway--my icecream machine just freezes the canister--I don't have to deal with salt and ice.
