I have a few kids cookbooks floating around my house. A couple of them are from a series called Handstand Kids. They have Italian, Chinese, and Mexican ones I think. Every once in awhile my kids get into looking through them and want to try some things. Micah (7) and I were looking through the Mexican one and decided to try a recipe called Fiesta Corn. I more or less followed the recipe since we were doing it together. He had fun doing it and the kids actually ate it pretty well! Just so you know, by the time you read this, our family will be making our way to Thailand to wait on our little girl to be born some time in mid-October. It might be a week or so before we get settled and I get another post written! I've got a lot of recipes and posts to keep sharing with you even though I'm relatively kitchen-less for the next 2 months! I also have a few friends who will be sharing some of their favorites, too! So bear with me during these months of change!
Fiesta Corn
2 cups corn kernels (canned, frozen, or some you've cut off a cob and boiled all work!)
~ 1/2 cup diced onion
~ 3/4 cup diced bell pepper (mix colors if you can!)
1/2 of a lemon or lime, juiced (about 1-1.5 Tbs)
1/4 cup chopped cilantro
1 Tbs oil
1/4 tsp salt
1/4 tsp black pepper
In a large skillet, heat the oil. Add onion and cook for about 5 minutes, until translucent. Add peppers and cook a few more minutes. Add in corn, salt, pepper and cook a few more minutes, until hot and cooked through. Stir in lemon or lime juice and cilantro. Serve and enjoy! Makes about 4 servings.
Notes: Spice it up by adding some chopped jalapeno or other pepper!

Love your blog, and thank you so much for sharing. We are also expats living in China and leaving here in two weeks to have a baby girl in Thailand at the end of Oct :) Wonder if we will get to meet in real life! Blessings on all of you as you travel and get settled there!
