So the other day I wanted to make some coffee creamer, but I didn't have a can of sweetened condensed milk. I remembered I'd pinned a recipe for this a long time ago. So I went to that to see if I could quickly throw it together. And, oh my goodness, it is super easy to do! It worked absolutely wonderfully in the creamer. So far that's the only thing I've tried it in. Let us know if you use it successfully in other ways! Make sure to read the notes at the bottom, too.
Sweetened Condensed Milk
1 cup milk powder (I used low-fat powder)
1 cup sugar
1/2 cup water
1-2 Tbs melted butter (I didn't use--see notes)
Throw everything in the blender and blend until smooth. This makes about the amount of one can.
Notes: Since I was making this to go in coffee creamer, I did not put the butter. I didn't want to add that to my morning cup of coffee! However, I think if you are using this in something you are baking, then you'd want the butter to make it a little thicker and maybe have more the properties of a real can of sweetened condensed milk.
I've been making a spiced coffee creamer this fall! Mix the sweetened condensed milk with 1 1/2 cups milk and add 1 tsp vanilla, 3/4 tsp cinnamon, 1/4 tsp allspice, and 1/4 tsp cloves. Super yummy and all the flavors of fall and Christmas!

It's actually very "trendy" to put butter in your coffee these days so you may want to include it. Coconut oil is healthier!
