Baking Tip: Pumpkin Pie Spice

'Tis the season for fall baking. Which means apples and pumpkin and all things spiced. I love it. Lots of pumpkin based recipes call for pumpkin pie spice. Did you know you can mix your own with spices you probably already have? Make your own by using the following proportions:

Pumpkin Pie Spice
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cloves
1/8 tsp allspice
1/8 tsp cardamom

This makes 1 1/4 tsp. You could mix up a larger amount and then just use as called for in recipes. Or often times I just undercut each of these measurements just slightly and then have closer to a teaspoon of the spice that I throw into a recipe if that's what it calls for. If you don't have cardamom--the least common of this list--just leave it out and use the other 4. It will be close enough!

    1. Don't worry at all, Rich! Just skip it! Or up your cinnamon or one of the others a bit. With this spice profile it will be flavorful without it.
