Soft and Chewy Cookie Bars

These might be my current favorite dessert. I've made them twice in the past 10 days. They have oats. They have peanut butter. They have chocolate chips. They are super soft and yummy. Lots of things to love. I adapted the recipe slightly from this site. Enjoy!


Soft and Chewy Cookie Bars
  • 1/2 cup butter, softened
  • 1/3 cup peanut butter
  • 1/2 cup sugar
  • 1/2 cup lightly packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup quick-cooking oats (not instant)
  • 2/3 - 1 cup chocolate chips or chunks

Cream together butter, peanut butter and sugars. Add in vanilla and eggs until well combined, followed by the flour, baking soda and salt. Stir in oats and chocolate chips. Place in a lightly greased 9x13 pan. Bake at 350F (180C) for 16-20 minutes. Edges should be lightly browned and bars will be slightly puffy and be mostly dry on the top. Do not over bake or they get too dry and won't be as soft and chewy! Cool before serving.
