German Potato Salad

I know potato salad seems like a very summer-y side dish. I know its not full on summer anymore. But I didn't get in the kitchen all that much this summer, nor did I blog all that much this summer. So I'm getting around to a few things a little late. Really, this potato salad is pretty good anytime. I've been making it for a good number of years now--ever since my sweet friend, Laura, introduced me to it. You see, even though my great-grandmother was famous county-wide in Lincoln County, Georgia for her potato salad, and even though most women in my family try to make theirs just like hers, I'm just not the hugest fan of mayonnaise based potato salads. So this German Potato Salad is perfect for me. While I'm not so sure there is anything making it distinctly German, its got a bit of bite from the vinegar and onion and it has bacon. You know its going to be good if it has bacon! And its pretty good both cold or room temperature (unlike having to worry about a potato salad with mayo sitting out too long!). German Potato Salad
1 1/2 lbs potatoes, peeled and chopped
3 slices cooked bacon (or more to preference)
2/3-3/4 cup diced onion
1/2 cup water
1 Tbs flour
1 Tbs sugar
1/4 cup cider vinegar (others, like white, work fine)
1 tsp salt
1/4 tsp celery seed (dill is a decent substitute)
1/8 tsp black pepper
1-2 Tbs chopped green onion

Prepare potatoes. Boil in lightly salted water until a fork easily pokes in but before they fall apart! Drain and place in a bowl to cool for 10-15 minutes. Crumble bacon in with the potatoes. In a small saucepan, cook onion and water over medium-low heat. When onion is starting to soften, add other ingredients and cook until bubbly and thickened. Pour over potatoes and stir to coat. Garnish with green onion. Chill until cold and serve! Enjoy!
