Summer heat runs me out of my kitchen every year. I don't even want to eat by the end of meal prep if the kitchen gets super hot. So I love super easy, not-much-to-cook, light and healthy meals this time of year. This Greek Chicken Wrap is simply something I throw together using a lot of recipes already on here. Its a great lunch or light dinner option.
Greek Chicken Wraps
Boneless chicken breasts
Greek vinaigrette dressing
lettuce
tomato
peppers
olives
sliced onions
Tortillas or other wraps (like Spinach ones!)
Slice chicken into strips. Place in a bag or plastic bowl and pour enough Greek dressing on to cover. Allow to marinate at least 30 minutes. In a skillet, stir fry the chicken until done. Layer in wraps with veggies of choice. Wrap or roll and enjoy! Serve with additional dressing to drizzle in the wrap if you want!
Notes: I find the sliced onion really gives this the Greek salad flavor. A little feta would be awesome, of course, if you have that option!
