About a year ago, my husband was coming off high season with his outdoor company and was in pretty good shape. He didn't want to let winter take that from him so he had his bike set up on a trainer in the house and he went in with a friend to buy a card for a local indoor pool. He'd already been toying with the idea of an Olympic length triathlon for awhile. Well, I decided the indoor bike was an easy way to get 20 minutes of exercise every day. Then I started meeting a friend at the pool a couple times a week. And by February I had decided maybe I could try to do a sprint length tri (I really hate running). My husband and I had a lot of fun getting ready for it together throughout the spring. We did an overnight in Hong Kong back in May and raced there after not getting into the one here in our city where we live. The course there was beautiful and we really had a great time racing. Fast forward to the present and there is a race in a city not too far away from us this fall. I'm halfway through my training plan to get ready for another race in October! I love having the goal and a triathlon really keeps things fun since you're doing 3 types of exercise every week. Anyway, as we've gotten ready for 2 races now, we're learning about nutrition. We still have a lot to learn too! My husband was just saying that after a week on the road his body about rebelled during his 2 hour workout yesterday--mainly because he hadn't been eating good. One thing we read tells you to "eat the rainbow." Back in the spring that was really easy--lots of good fruit options. Right now we're about over the banana and apple only selection. Thankfully there are still a few mangos. Avocados have been a top choice for us in training to get healthy fats. So that brings us to this Mango Avocado Salsa. We have made this a lot this year. I think Brian saw the recipe in a Triathlete mag and we've adapted from there. I'm so thankful avocados are more widely available in China now and I have found great deals buying them online (search 牛油果 China people). I did not say healthy eating is budget friendly--while you may cut out a lot of expensive creams, butter and cheese, all the fruit can add up! Ha! Anyway, this recipe is totally adaptable. Hope you enjoy it!
Mango Avocado Salsa
2 medium sized mangos, diced
1-2 avocados, diced
2-3 Tbs finely diced sweet red bell pepper
handful cilantro, chopped
1 jalapeño or other spicy pepper for kick, add to preference
juice and zest of one orange or lemon
couple pinches of salt
dash or two of black pepper
Mix everything together. Chill. Serve with chips.
We like baking tortilla triangles until crisp or using corn chips if available. We like this for lunch or a post workout snack on longer exercise days!
