BBQ Pork Sandwiches

If you've been around here long, you know I don't often leave our favorites alone. I often feel I can find something better out there. In the case of BBQ pork sandwiches, my efforts have been well worth it. I know there is a crockpot BBQ recipe on here, but this one is really just as simple, can be slow cooked in the oven or a crockpot and tastes great with some homemade BBQ sauce on a whole wheat bun. Or a regular bun if you prefer. Try it. You'll like it.


BBQ Pork Sandwiches

Spice Rub:
1 Tbs salt
1 Tbs black pepper
1 Tbs brown sugar
1 Tbs paprika
3/4 tsp cayenne
3/4 tsp garlic powder

~2 kg (4 lbs) pork tenderloins (see this post about China pork loin options!)
1 cup apple juice
1/2 cup cider or white vinegar
1 Tbs Worchestershire sauce
3/4 tsp liquid smoke (opt)

Mix together the spice rub. Using clean hands, coat your pork loins with the spice rub. They can sit overnight in the fridge or you can use them right away. Place in an oven-safe dutch oven or a crock pot. Pour the liquid mixture of apple juice, vinegar, Worchestershire, and liquid smoke around it. Cook 4-6 hours on high (6-8 on low) in a crock pot (or covered in a 325F/160C oven for 4 hours). Spoon some of the liquid over the meat ever few hours.

Remove meat and chop or shred. Place in a serving bowl and stir in some BBQ sauce or even some of the cooking liquid. Serve on fresh buns with additional BBQ sauce for topping! Enjoy!
