In honor of Cinco de Mayo this week, I'm posting a meal idea for you! Taco Salads. We are making these for dinner tonight, so I don't have a pretty salad picture for you yet, but here's what I do to make them...
Taco Salads
Decide what you'd like to use from this list or just do your own thing!
Tortillas
Lettuce
Beans
Chicken, beef, etc
Cheese
Tomatoes or other veggies
Salsa
Ranch or some kind of dressing maybe
Sour Cream (make your own here) or yogurt
To make your salad shells:
Preheat your oven to about 325F (160C). Place an oven safe bowl upside down in the oven. Lightly spray tortilla with some oil or Pam if you want (I have one of those pampered chef type oil sprayers). Drape tortilla over bowl and bake until crisp (about 6-8 minutes maybe). You can then serve these as the shell and load the inside with salad fixings just like you'd get if you ordered it in a restaurant! Enjoy!
You might have to just experiment with how the tortillas lay on your bowl--you can also line the inside of the bowl rather than draping them on an upside down bowl.

I used to heat a pot of oil, lay the tortilla on the top of the pot and gently push the tortilla in with a large ladle and hold it in the hot oil for a few minutes until it had fried crisp. Drain on paper towels, makes a deeper cup for taco salads. Probably not as healthy as baking like Sara Beth's!
