Ranch Dressing

So, summer is definitely here. We're only thinking about nice, light meals at the end of our hot, sticky days this week. So, in honor of summer and light meals, I'm going to post a salad dressing recipe each week for the next month or two. This one was given to me by my friend, Summer, who lives in South Asia. I kind of adapted a bit though.

 Homemade Ranch Dressing
1 cup mayo
1/2-1 cup buttermilk (Make your own with 1 Tbs vinegar or lemon juice to one cup of milk)
2 tsp dried parsley
2 tsp finely diced green onion
1/2 tsp garlic powder
1/4 tsp onion powder
1/4 tsp black pepper
1/4 tsp salt
1/4 tsp dried dill (opt)

Whisk all ingredients together and refrigerate.

Notes: I couldn't believe how much this tasted just like the Ranch packet mixes I've been bringing from the US for years!! Also, the recipe said 1 cup buttermilk, but I only put a half cup and mine was plenty thin. (You can use regular milk too of course.) Just start with a half and add more if yours needs it. That would affect the saltiness so adjust from there by adding a bit more if needed. I like a little fresh green onion in ours, but if you don't want to use that just up the onion powder to 1/2 tsp. Oh, and another recipe I found for this suggested dill as one of the ingredients, which we like. You might experiment! Enjoy!
