I've slacked on my dressing-a-week goal during the 2nd half of this summer. As always, summer is busy and we haven't been home much! So, this is one that my friend Kandy P. used to make in Taiwan. I haven't actually made it myself, but if Kandy recommends it, it's good!
Catalina Salad Dressing
1/2 cup sugar
1/3 cup ketchup
1/4 cup vinegar
2 Tbs lemon juice
1 tsp salt
1 tsp paprika (opt)
1/2 cup oil
Put first 6 ingredients in blender and mix well. Slowly add oil while blender is going. Refrigerate. Enjoy!
**You can also just put everything in at once and mix but if you do the oil at the end, like many salad dressing recipes call for, you are creating an emulsion between the acid and the oil, thereby making a thicker dressing.
