Sorry for the lack of blogging lately. What I thought was just a 5 day visa run/vacation in Hong Kong has turned into 2 weeks here due to some medical concerns with our new baby we're expecting. I'm about 10-11 weeks along and we're hoping everything is going to be okay with this little one. But me traveling back home by myself with 3 kids is not on the list of "light activity!" So we're taking it easy around here until Brian finishes his meetings on Monday. But, all that means lots of peanut butter and jelly sandwiches and eating out for this family! No fun time in the kitchen. So I enlisted some help for a recipe this week. This is from my friend, Ashley F.. We moved to Asia about the same time back in '05, and they are have just moved back again after a couple years in the States. She said this is a Southern Living recipe that they have really enjoyed and wanted to pass along. Looks like all the ingredients are very overseas friendly to me!
Spicy Honey Brushed Chicken
2 tsp garlic powder
2 tsp chili powder
1 tsp salt
1 tsp cumin
1 tsp paprika
1/2 tsp red pepper flakes
8 skinless chicken thighs
6 Tbs honey
2 tsp cider vinegar (I would think white or white wine vinegar would work fine to substitute)
Preheat broiler or grill. Combine first 6 ingredients in a bowl. Add chicken and toss to coat. Put chicken pieces on broiler pan and cook 5 minutes on each side. Combine honey and vinegar in a small bowl and stir well. Remove chicken from oven and brush 1/4 cup honey mixture on chicken. Broil 1 minute. Remove chicken from oven again. Flip pieces and brush remaining honey mixture over them. Broil 1 minute or until chicken is done.
I'm excited to try this! Ashley mentioned that her kids love this, even with the chili powder and pepper flakes. They have also tried it grilled and broiled and with various chicken cuts--thighs, legs, breasts--and it works great with whatever! Thanks, Ashley!

My friend Rhonda already tried this and said it had really good flavor! She did say though, that for their kids it was too spicy and next time she'll only put 1 tsp chili powder--just to let you know another opinion on it!
ReplyDeleteWe made this on the grill last night for dinner. I used chicken breasts that I pounded to an even thickness. I might try chicken legs next time. I only put 1 tsp of chili powder and my kids ate it great! Might could up it just a bit but not a full 2 tsp for our family! Brian thought the spice mix was like kao rou for those of you that live in China!
ReplyDeleteWe really liked the taste of this recipe, but I had to make the coating 8 times to get the chicken thighs coated well. Also we had to broil for at least 15 min on each side to get the temp to reach 180F.

I'm trying to find a post of yours from awhile back where you talk about your grill....something about having a local one, but getting tired of the charcoal, etc. And then some other kind that you brought back wiht you from the US? Do you know which post that might be? I'm really wanting to grill some things this summer!
