I love Happy Hour at Sonic. I've thought about it a lot lately. Vanilla Dr. Pepper? Yes! But my favorite is a Cherry Limeade. So when I saw a Strawberry Limeade recipe today, I got to wondering if I could try cherry. Especially since there are lots of cherries in our market right now. So this is my attempt at one, though I do have to use lemons rather than limes. Sonic has nothing on this...believe me! Its GOOD!! I like this even better than the strawberry lemonade because its more tart!
Cherry Lemon or Limeade
Measurements are for one drink...but this is definitely something you should drink with friends!
Sprite
Ice
1 lemon or lime
1/4 cup cherry juice
Cherry Juice
300-350g fresh cherries (about 3/4 pound)
1/3 cup sugar (could do as little as 1/4 cup if you want it really tart)
1/3 cup water
To make fresh cherry juice, if it is not available to you, start with some clean and de-stemmed cherries.
Place them in a saucepan with 1/3 cup sugar and 1/3 cup water. Turn heat to medium and cook down.
Mash around with a masher or fork to break up cherries. Flesh will start to come off the pits. Cook about 5 minutes.
Pour into a strainer and allow as much juice as possible to drain through. You can stir it around a bit and try to press on some of the flesh and skins in the strainer to get more juice out.
Refrigerate the juice. It will make enough for 4-6 servings probably.
When ready to make the drink. Fill glass with ice. Squeeze in the juice of one lime or lemon. Add 1/4 cup cherry juice. Fill glass to top with sprite. Stir, garnish with lemon or lime wedges, and enjoy!
