Snickers Peanut Butter Cookies

I've had some of those days lately. You know, the ones that only some chocolate can make even remotely better? I recently ran across this recipe on a couple different food blogs. I made up my version of it and have decided they are just about my new favorite cookie. I mean a peanut butter cookie is pretty good on its own, but adding some Snickers to it? SO GOOD. Try them. You'll see! These are perfect for those kind of days or just any day really! I love that I can buy the Snickers and milk chocolate bars in any grocery store or even mini-mart around here. Makes them super easy to whip up! As with about any cookie, these are best when they are still just a little bit warm!


 Snickers Peanut Butter Cookies
1 1/4 cups all-purpose flour
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 cup butter, softened
1 cup creamy peanut butter
3/4 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1 Tbs milk
1 tsp vanilla
1+ cup chopped Snickers candy bars (I use 3-4 55g bars)
1/3-1/2 cup chopped milk chocolate candy bar (1-2 bars)


Preheat oven to 350F (180C). Chop up Snickers and milk chocolate candy bars. I cut the Snickers bar in half lengthwise and then dice the 2 halves. Milk chocolate can be chocolate chip sized or so.


In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside. In a large mixing bowl, cream butter, peanut butter, and sugars until fluffy and smooth. Add egg, milk and vanilla and mix until combined. Add in dry ingredients and mix well. Stir in chopped candy bars. Drop by rounded spoonfuls onto baking sheets. Gently flatten each cookie just a bit with the palm of your hand. Bake until cookies are browning and still slightly puffy--about 10 minutes. Cool on baking sheet for 3-5 minutes and then move to wire racks to cool completely. Makes about 3 dozen.


Notes: Just a couple things I figured out--try to get your Snicker chunks in the middle of the cookie. If they are on the edges, the caramel can melt out on the pan and burn. Also, if its on the very top, it can melt a bit and make the top of the cookie not look so great--though still tastes fine! I tried to push mine to the middle of the cookie dough a bit. Also, really let them cool on the pan for a few minutes before taking them off--otherwise the just fall apart! If you take them out when they are browning but still a bit puffy, they will be a soft cookie and not get crunchy right away! My personal favorite way!
