Whew! We have had a crazy past week around here. It started with me being on my own with the 4 kids while Brian went on a trek in the mountains. It ended with Brian and some of the guys back here in town for one of the guys to go to the hospital! He had developed fluid in his lungs after developing Acute Mountain Sickness. They were at some really high altitudes. Anyway, I don't think I've cooked a good meal for my family in about 10 days! Let alone blog about any of it! We've been doing good just to keep the basics under control this past week! But, I found these pictures in my stash and thought I'd share this with you today. This is the kind of stuff we've been eating! Ha! I use this sauce for topping pizza or for dipping calzones in.
Simple Pizza Sauce
1 can tomato paste (~6oz/150-170g) or larger can of tomato sauce
3/4 tsp basil
3/4 tsp oregano
1/4 tsp garlic powder
1/4 tsp onion powder
1/8 tsp salt
1/8 tsp pepper
water
Dump tomato paste into a bowl (I would just use sauce in America, but don't have that available here!). Add water to get it to a saucier, spreadable consistency. Mix in spices. Taste and adjust if you need to. I think different brands of tomato pastes and sauces will have different salt content, so you may need to add that, especially.
Adapt this to your likes or what you have on hand! Cut back on some of the basil and oregano and add a little rosemary or thyme or marjoram for depth of flavor. Use Italian seasoning instead of basil and oregano. Don't have onion powder? Just leave it out! Use garlic salt in place of garlic powder and salt. Is your tomato paste just too tangy? Add a 1/4 tsp sugar to help cut the acidity! Just make do with what you have!
Mini Pizza Toast
1 loaf French Bread
Pizza Sauce
Toppings of choice
Cheese
Slice bread no more than 1 inch thick. Lay out on a cookie sheet. Top with sauce, toppings, and shredded mozzarella cheese. Toast until cheese is melted! Enjoy! (I used a really crusty loaf of French bread available in my local grocery stores for about 50 cents a loaf!)
