Baby Food Spice Cake

Don't run away just because you saw "baby food" in the title of this cake! This is an amazing cake that is great for dessert or even for breakfast/brunch. My mom has been making this as long as I can remember. In whatever cookbook she got it from it had this name, but its really just a cake with a fruit puree in it. Originally, the recipe recommends a jar of plum baby food. I have used peaches, pears, and mixed fruit successfully. You could easily use applesauce, too. Just so you know, I often find that this cake sinks in the middle as its cooling if I use a bundt pan (as you can see in the picture!), but it still tastes good!


Baby Food Spice Cake
3 eggs
2 cups sugar
2 cups flour
3 tsp baking powder
1 tsp salt
1 cup oil
1 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
1 small jar fruit baby food (about 1/3-1/2 cup homemade fruit puree)

Mix all ingredients together in a bowl. Pour into a greased and floured bundt pan (or prepare two 7x3 or 8x4 loaf pans). Bake at 325F for 55 minutes or until it tests done when a toothpick comes out clean. Allow to cool about 10-20 minutes in the pan, then dump onto a plate to finish cooling.

  1. It was from a cookbook by a BC in Greenville SC when we lived there in 76-77. The cake always fell in the middle for me too so must be the nature of the recipe, but it always tasted great.

  6. Right before we went to Thailand for ChunJie, my baby started refusing baby food. Which meant we brought back all of the baby food that we were given for her meals on the plane. So glad you posted this recipe...I tried it tonight and it was DELICIOUS!
