Make Your Own: Cornmeal

The title of this post is a little misleading. I don't actually grind my own cornmeal--though that would be fun! Here in China, its really hard to find cornmeal in a texture like we'd buy in the US. Its either too finely ground or not ground enough. So I've been buying one of each and mixing it to make it about like I'd want it. It has worked fine in cornbread and some other upcoming recipes I have to share with you!


Mix Your Own: Cornmeal
2 cups coarse ground cornmeal (玉米渣 on the bag I have)
1 1/2 cups finely ground cornmeal (玉米粉) -- not cornstarch/cornflour

Mix together and use in any recipe calling for cornmeal! I usually just eyeball this, but I measured it last time to give you an idea. Usually I just put more of the coarse ground and less of the powder. Its up to you though--even half and half will work fine. I hope this is helpful!

  2. Where do you find the cornmeal? We live in Wuhan, have Metro, Carreforre (sp?), and Walmart, I haven't looked for it before but really want to make cornbread :)

    1. I find these 2 grinds of local cornmeal at any grocery store--Carrefour or Walmart will carry it. It works for a decent cornbread, though the consistency isn't quite what we'd get from cornmeal in the US--not sure about other locations around the world. More often than not these days, I grind popcorn myself bought off Taobao (or what Metro sells) into my own cornmeal and we like the results of that better. But I have a grinder powerful enough as I do other grains as well.
