We've been making this at least once a week this winter. The broccoli has been good here in recent weeks. Its so simple to throw together and it tastes good! Hope you enjoy it, too!
Garlic Roasted Broccoli
2 medium-sized heads broccoli, washed and cut into florets
2 large cloves garlic
1/4 tsp salt
~1/2 Tbs olive oil
Line a baking sheet with foil (easy clean up!). Spread out broccoli and drizzle with olive oil. Throw on pressed or minced garlic over top and sprinkle with salt. Toss together and spread back out evenly on the pan. Bake at 375F (195C) for about 10-12 minutes.
Notes: I do about 1 large clove of garlic per head of broccoli and about 1/8 tsp salt per head of broccoli. Its really just kind of to taste. Sometimes if my head of broccoli is on the smaller side I don't sprinkle on quite as much salt. 10-12 minutes baking time should still give you a good, firm broccoli--not mushy!

thanks! we have been making this too and it is so good. also good if you use sweet potatoes. also fyi- have been making your biscuit recipe with half oatmeal flour (oatmeal into the blender=flour) and half white flour. you can not roll them out, but can do "drop biscuits" and they are really good and a bit more fiber. question- is there anyway to make good brown sugar out of Chinese horrible "red" sugar? like mix with white?! blessings to you all! from Emily in Shanghai
ReplyDeleteEmily, do you have Metro in Shanghai? They have a great Taikoo Brand Soft Brown Sugar. Its maybe slightly more expensive than what's in the grocery stores--the nasty hongtang! But its totally worth it. Sometimes stores still have the more Chinese-y kind in Taikoo brand too. Before I lived near Metro though, I'd buy the local brown sugar, pick out the big hard chunks and break up softer ones, and then usually mix it half and half with a "wetter" white sugar that you can often find in the stores--just to have the same consistency of sugar going in. If I didn't have the wetter white sugar, I just usually cut back the dark brown sugar by 1/3-1/2 and replaced with white. Here is a Taobao link for the good brown sugar if you use it.
