I would imagine most of us try to serve our families relatively healthy breakfasts throughout the week. But sometimes on the weekend (or even on a morning when you lack other ideas) a more special breakfast is a lot of fun. These muffins probably fall in the "special" category because they have chocolate chips in them. When it comes to ease, though, they are still quick and easy to throw together. So whether its the weekend or you just need a fresh idea during the week, these muffins will probably be loved by all! I mean, who doesn't love peanut butter and chocolate? I adapted this recipe from a site called Annie's Eats--a food blog I've had fun exploring and using a bit in recent months.
Peanut Butter Chocolate Chunk Muffins
2 1/4 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
2/3 cup brown sugar
1/2 cup oil
1/2 cup peanut butter
2 eggs
1 cup milk
100g milk chocolate bar, chopped small (I used one from Ikea!)
Line a muffin pan with paper cups or grease--will make about 12. In a mixing bowl, whisk together brown sugar, oil, peanut butter, eggs and milk. Sift in flour, baking powder and salt. Stir just until combined. Stir in chocolate chunks or chips. Fill 12 muffin cups (nearly to top). Bake at 375F (190C) for 15-20 minutes or until muffins test done. Cool for about 5 minutes and then enjoy!
Notes: I used a chopped milk chocolate bar, but you could use dark chocolate as well. And of course if chocolate chips are easily available to you, save time and just use those! These would be good with milk, semi-sweet, dark--just whatever your preference.

Even though this isn't related to muffins.. I thought you'd find this interesting, unless that is, you didn't already know!
ReplyDeleteLiving in China myself, ground beef is sometimes sold out or not ground how I like. I found that if you put meat slices in the blender and shake the blender while you blend the meat and make sure it isn't on for more than 10 seconds at a time, it grounds meat just like they do in the store!
