In the past year or two, I've started often choosing to make my bacon in the oven. I love doing it this way because its next to no mess. Bacon is great on the stovetop, but you have a greasy pan and greasy stove and greasy backsplash to clean up afterward. For No Mess bacon, preheat your oven to about 375F (195C). Line a cookie sheet with aluminum foil--make sure it has an edge so grease doesn't spill everywhere! Lay out bacon pieces. Bake until bacon reaches desired doneness (I'm a crispy bacon lover!). Remove bacon from pan to drain excess grease on a paper towel. Allow bacon grease in the pan to cool and harden a bit, then lift up the foil and throw it away! Unless your foil got a whole in it (sometimes happens with cheap, China foil I find!) you shouldn't even have to wash the cookie sheet!
For those of you in my city, I get bacon at the fish market (qing shi qiao). Its Y28/kg and we think its one of the better options around, especially for that price! I usually divide the package into 3-4 portions and freeze them. Works great!
