I LOVE no cook meals and side dishes during the summer. I think you've heard me say it a lot! I really enjoy a good broccoli salad especially. Really, I like this year round. I've tried a bunch of different amounts and combinations on the dressing for this salad, but I think I finally figured out a pretty good one. A little sweet, a little sour. So yummy. Its totally up to you what all you want to put in the salad. Some people like cheese in it, but I don't usually put that. Some prefer purple onion, some prefer green onion. Just adjust this to your personal tastes and enjoy!
Fresh Broccoli Salad
2 small-medium sized heads broccoli
~1/4 cup diced onion or sliced green onion
~1/4 cup raisins or dried cranberries (or both!)
Several slices of cooked bacon, crumbled
2 Tbs sunflower seeds
Dressing:
1/2 cup mayo
1/4 cup sugar
1 1/2 Tbs white vinegar
Cut broccoli florets into small bite-sized pieces. Wash well. Because broccoli is difficult to wash and dry for eating raw, I usually dip mine in water I just boiled and then immediately take it out and refrigerate it. It doesn't hurt it to go into the boiling water for just 30 seconds or so to "sterilize" it. Prep all the bacon and other ingredients. Mix dressing together. Refrigerate everything until time to serve. Mix dressing and salad just prior to serving.
