For me, its always a treat when I get a flavored coffee. The flavored coffee creamer recipe I have on this blog has been really popular and its great. It has tons of possibilities with various liquid extracts and spices added in. However, sometimes its nice to have a Coffee-Mate style non-dairy version that you can shake in and you don't have to worry about the milk going bad if you can't use it all. I had some powdered vanilla extract, so I got to thinking that I should be able to at least create a Vanilla Creamer with that. I think I was fairly successful! So here is what I did! Hope you can enjoy this too!
Vanilla Coffee Creamer (Non-Dairy)
2/3 cup Coffee-Mate type powdered creamer
2/3 cup sugar (more to taste)
2 tsp powdered vanilla extract*
Stir together all ingredients and store in air-tight container. Add a teaspoon or so at a time to coffee and adjust to taste. For a more uniform consistency, especially if you are using a large grain of sugar, powder your sugar first by blending it in a blender or food processor.
Notes: My mixture has equal parts sugar and creamer, but if you know you like a sweeter coffee, you could put 3/4-1 cup of sugar in the mix.
