Sorry for the recent lack of new posts. We have been crazy busy this summer. This past week, between a trip to the mountains, various events hosted in our home, and a birthday in our family, I didn't have much computer time! And have I mentioned yet on this blog that I'm pregnant?! I'm nearly to the 3rd trimester and I feel its slowing me down a little bit these days. So things around here are about ease! Quick marinades for chicken that we can then throw on the grill have been a go-to meal for us this summer. This one is super simple and is made from all local ingredients for me. We like marinating chicken pieces and skewering them because our kids love meat on a stick. But you could just do whole breasts, too. I've been using lemon juice for this, but you could substitute orange or lime with slightly different flavor results. By using lemon juice, it makes it a bit different flavor from my regular teriyaki marinade. If you don't have a grill, just broil these in the oven or you could also leave it off the sticks and quickly stir-fry in a little olive oil on the stove top! Enjoy!
Soy and Citrus Chicken Skewers
6 Tbs soy sauce
1/4-1/3 cup fresh lemon juice (or use orange or lime!)
1/4 cup honey
2 Tbs oil
4 large cloves garlic, minced
4 chicken breasts, cut into 1-inch cubes or so
Mix together soy, honey, lemon juice, oil and garlic in a ziplock bag or container. Add chicken and marinate in the fridge for 4-6 hours. When ready to cook, lace chicken pieces onto skewers. (Tip: If using bamboo skewers, soak them in water for about 10 minutes before using to help reduce chances of them catching fire on the grill.) Grill or broil or stir-fry and serve!
Notes: I know I have pineapple on these skewers pictured, but we actually didn't love how it paired with this as much as we do the pineapple with the teriyaki marinade.
