Peach Cobbler

I don't make or eat peach cobbler very often, but if I'm going to eat it, I have a certain way I like it. It can't be too biscuit-y of a topping for me. It needs to be just a little crusty on top but with a lot of buttery, gooey goodness underneath with the peaches. When my mom was here, she mentioned a recipe she'd found in a cookbook done by a lot of expats in Tanzania that she used to use when they lived in Nigeria. After she got home, she emailed it to me. We tried it and really liked it! I used canned peaches that I bought at Metro for about Y10 because I didn't figure I'd really like it with the hard, white peaches we have available to us right now. But you can also make this with fresh peaches and a little homemade syrup. You could use this recipe with other fruits, too.


Peach Cobbler
1/4 cup butter
1 cup flour
1 cup sugar
2 tsp baking powder
1/2 tsp salt
1 cup milk
1 800g+ can sliced peaches or other fruit (see note below for using fresh fruit)

Preheat oven to 350F (180C). Place butter into a 7x11 or so baking dish. Place in oven and melt butter in pan. Meanwhile, mix together flour, sugar, baking powder and salt. Add milk and stir until well mixed. Pour batter over melted butter, being careful not to disturb the butter too much. Pour fruit and syrup over batter, still being careful not to move it around too much.


Bake for 45 min to an hour, until nice and browned on top. Batter will come to top and form a crust as it bakes.


Fresh fruit:
If using fresh fruit, I'd say about 4-5 peaches, sliced. Make a simple syrup to put with them by mixing together about 3/4-1 cup sugar and 1/2-3/4 cup water until the sugar melts. You can cook the peaches in the syrup for a bit or just mix the syrup and fresh peaches. Either will work. A capful of almond extract is great in this mix!

Notes: The peaches I used were halves, so I just sliced them. I also tried this with fresh peaches, but the ones we get just don't have that much flavor so we liked it better with the canned peaches (sad, I know!). Play around with added spices or varying the fruit!
