I love the BBQ Chicken Pizza that we often make. The BBQ sauce recipe I posted last month works great for it. But yeast doughs do take some time. This summer my husband traveled a lot, so I always tried to keep some tortillas in the freezer for easy meals. But, then again, a lot of times you want some salsa to go with tacos or quesadillas and I didn't always want to make it. So we decided to make BBQ Chicken Quesadillas one night. Me and the kids all loved them. I loved that I usually have the BBQ sauce made and in the fridge and that they were quick and easy to throw together! Maybe you'll enjoy them too! And you can totally customize them to what you like or have available I would think!
BBQ Chicken Quesadillas
Tortillas
chicken breast, diced small
sliced onion
chopped cilantro
BBQ sauce
Shredded cheese
Other toppings might include chopped pineapple or bacon
Dice chicken breast. Put a couple teaspoons of olive oil in a skillet and cook the diced chicken. Add a tablespoon or two of the BBQ sauce just before its finished cooking. Set aside. Heat a large skillet. Spread on a little oil or butter and place first tortilla. Top with cheese, chicken, sliced onion, and a sprinkle of cilantro (and any other toppings you may want). Drizzle on a little BBQ Sauce and top with 2nd tortilla. Flip when ready. Cut and serve with extra BBQ sauce for dipping if desired.
Notes: One chicken breast is probably enough for 2-3 quesadillas.
