Here it is nearly November and I've done next to no seasonal baking or cooking. Makes me sad. But its so hot here in Thailand and feels nothing like fall! So I've kind of been saving up for when I get home in the next week or so. But I have made this Apple Crisp a time or two in order to satisfy my urge for a fun fall dessert. I first saw the recipe here, but have made a few changes. I love the syrupy spiced apples, the buttery crisp topping, and the crunch of the almonds. Of course if you didn't have almonds, you could just leave those out or substitute a different nut. And you could also use whatever fruit is seasonal. Its REALLY yummy served warm with some vanilla ice cream!
Almond and Oat Apple Crisp
For apples:
~8 medium apples, peeled, cored, and chopped into cubes
2/3 cup sugar
1 1/2 Tbs lemon or lime juice
1/8 tsp cinnamon
few dashes of nutmeg
pinch of salt
For almond oat topping:
3/4 cup brown sugar
1/2 cup flour
1/2 cup oats
1/2 cup sliced or slivered almonds
1 1/2 tsp cinnamon
1/2 tsp salt
1/4 tsp nutmeg
1/2 cup butter (cut back salt to 1/4 tsp if using salted butter)
Prepare apples and toss together with sugar, lemon juice and spices. Place in an 8x8 pan or other medium sized baking dish. For the topping, mix together sugar, flour, oats, spices, and almonds. Using a pastry cutter, two knives or your hands, work the butter into this mixture until it resembles coarse crumbs. Sprinkle over top of the apples. Bake at 350F (180C) for 45 minutes to 1 hour. Take out when apples look juicy around the edges and topping is browning and crisp. Top with some ice cream and enjoy!
