I really don't do all that much copy-cat cooking. Just a few things here and there. But back when I was working on BBQ sauce recipes, for some reason we thought about the Monterey Chicken dish you can get at Chili's. Chicken, BBQ sauce, bacon, cheese....should be simple enough right? So we made up our version of it and loved it! Here's what we did...
Chili's Style Monterey Chicken
Chicken breasts
BBQ Sauce
Bacon (one slice per piece of chicken)
Shredded cheese (Chili's uses a cheddar jack mix)
Salt and Pepper
chopped tomato and green onion (I didn't use this)
Take chicken breasts and pound lightly to a relatively even thickness. Brush lightly with some BBQ sauce and liberally sprinkle with some salt and pepper on both sides. I did this about 30 minutes before we were ready to cook it. We chose to grill our chicken, but you could also bake it (375F/195C ish) or broil it. Make sure to baste with some BBQ sauce as you go if you think its getting dried out. While chicken is cooking, cook up a piece of bacon for each piece. About 3-5 minutes before its ready (if baking or broiling), spoon another tablespoon or so of BBQ sauce over top of each piece. Add a piece of cooked bacon and a sprinkling of cheese. If grilled, remove from grill and top with same things and put in a hot oven for just a few minutes. Bake chicken just a bit more to melt cheese. If you want to really be like Chili's, sprinkle on a little chopped tomato and green onion! Serve and enjoy!
