Peanut Butter Krispies are amazing. Our whole family LOVES them. I grew up eating them. My sisters and cousins and aunts all make them. I introduced them to Brian before we even got married. They are probably one of his favorite treats that I make. They are super easy. Sounds great, right? Except that they call for corn syrup. Now in the U.S. and maybe some other places around the world that isn't a problem. But here in Asia, its not real easy (or should I say cheap?) to come by. In China I can actually get it at an import store for about $5-6 a bottle if I want it. I noticed here in Thailand that the same size bottle is about $10! Not to mention the price of peanut butter here. So maybe this isn't a Thailand recipe. Ha! Now I've tried making these with homemade corn syrup. In theory it should have worked, but I ended up with a pot of dry cornflake and peanut butter mess. My husband and some gracious guys at my house for a movie night just ate it with a spoon. But still. Not what I was going for. Then one time I had just about 1/4 cup of corn syrup left in a jar so I added another 1/4 cup of honey to make up the difference. It worked great and they tasted good! So the next time I tried using ALL honey. While they taste a little more honey-y, they are still really yummy and work great. So we've taken to making them a little more often around our house using just honey as an adequate substitute. Hope you can enjoy these sometime too!
Peanut Butter Krispies
1/2 cup sugar
1/2 cup corn syrup or honey
1 cup peanut butter
3 cups corn flakes
Bring sugar and syrup or honey to a boil over medium heat. Allow to boil about 1 minute and remove from burner. Stir in peanut butter until smooth. Add cornflakes and mix until coated. Spoon out onto a Silpat, parchment or wax paper to cool. Enjoy!
Notes: There are SO many honey choices in China. I buy a light colored honey if at all possible. Actually, my favorite lately for flavor and price has been the Great Value brand one at the Trust Mart (owned by Walmart I'm assuming) just near my house.
