Were you shocked to see I had posted something today?! Yeah, I think my 6 week blog hiatus is over. Its about 2 weeks longer than I really intended, but do you know how hard it is dealing with jet lag when you have a family of 7? And do you know how long it seems to take to get resettled in your home when you've been gone for a month? And doesn't it always seem that whenever you finally sit down to do something that the internet decides not to work? And then things get in the way for another few days and you're so busy you aren't even on the computer. Yeah. I know a lot of you know exactly how I feel. Its been those kinds of days around here! So don't have your hopes up for some great new recipe. We've been survival cooking around here the past few weeks! But before I went to the US last month I got to playing around with my biscuit recipe. I wanted a quick and easy bread for a dinner one night. But I needed REALLY quick and REALLY easy, thereby ruling out anything with yeast. Biscuits were the logical answer but I wanted them to be a little different than what my kids eat a couple times a week for breakfast. Enter some cheese and my spice rack. So here's what I came up with and we have made them a few times now. Feel free to customize and play with the flavor profile. Its totally forgiving! Enjoy!
Cheese and Herb Biscuits
2 cups all purpose flour
3 tsp baking powder
1 tsp salt
1/2 tsp parsley
1/4 tsp garlic powder
1/4 tsp oregano
1/4 tsp basil
1/8 tsp ground black pepper
1/8 tsp paprika
dash of chili powder or cayenne pepper
1/2 cup shredded cheese
1 cup milk
1/4 cup oil
Mix together all dry ingredients and spices. Stir in cheese. Add milk and oil together and stir just until moistened. Pour out sticky dough onto a very well floured surface. Turn dough a time or two to coat and pat to desired thickness. Cut into biscuits using a cutter, glass, or recycled tin can. Place on a cookie sheet. Bake at 425F (220C) for about 10-15 minutes--until puffy and lightly browned. Should yield 9-10 biscuits.
