I'm off in the mountains with my family for several weeks, so there is lots of upcoming guest posting! Here is another cultured food recipe from Veronica. This pickled radish will be very sour compared to the other pickled radish recipe she shared before.
PoPo's Pickled Radish and Carrot
You will need:
white radish (bailuobo)
carrot (huluobo)
garlic
salt
little spicy red peppers (xiaomila)
Cut carrot and radish into small matchsticks. Use a 1:2 ratio - more radish. Sprinkle with salt (maybe up to 1/2 cup). Toss to coat. Wait one hour. Put the matchsticks into a jar. Pour the salt water over them. Add enough clean water to cover. Add 1 whole head of garlic and a few xiao mi la (spicy peppers). Pour a cup or so of water into the rim of the pickling jar. Put the lid on. Wait one week to eat. If the jar starts to be stinky, change the water around the rim of the pickling jar.

ReplyDeleteI know some people have said that Mason jars are much lower priced in Hong Kong and Thailand at some of the grocery stores that carry lots of import type stuff.
Also, the 500g and 1000g Kewpie mayo jars can fit regular Ball or Mason canning lids--though you'd still have to eat a lot of mayo to save the jars and have the lids from the US.
Have you looked much on Taobao for more local options? I bought some cheap jars that came with lids that I think would seal nicely for a one time use--you could maybe work with the seller for more lids if you needed them later. http://item.taobao.com/item.htm?spm=a1z10.1.w4004-1777881379.9.t2xKOX&id=15628923304
